The Best Vegan Apricot Tart Ever RECIPES

Almond crust 

  • 1 cup almonds, chopped
  • 1/2 cup oats
  • 1 tbsp almond butter @nu3_de
  • 9 dates, pitted and chopped @palmyradelights
  • 1 tbsp water
  • Place all the ingredients in a food processor and process until you get a sticky dough. 
  • Press the dough into the tart tin and refrigerate whilst making the filling. .

Apricot filling:

  • 1 cup almond milk
  • 1 cup coconut milk
  • 4 apricot, pitted
  • 3 tsp stevia powder
  • 1 tsp lemon juice
  • 1 tbsp corn starch
  • 1/2 tsp agar agar
  • 1/2 tsp vanilla


  1. Place all the ingredients except the corn starch and agar agar in a food processor and blend until well combined.
  2. Pass through a sieve and pour the mixture in
  3. a saucepan. Add the corn starch and agar agar and bring to a brief boil, stirring continuously.
  4. Pour into a bowl and let cool until lukewarm, stirring from time to time.
  5. Spread the filling on cake base and place into the refrigerator for at least 4 hours.
