THE BEST CONFETTI WAFFLE BIRTHDAY CAKE


INGREDIENTS
WAFFLES

  • 2 eggs
  • 2 cups flour
  • 1 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 tablespoon sugar
  • 1 tablespoon + 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon imitation vanilla
  • 1/3 cup sprinkles

WHIPPED CREAM

  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar

ICING

  • 1 cup powdered sugar
  • 1 1/2 teaspoons milk
  • 1 teaspoon imitation vanilla
  • Pink food coloring
  • Sprinkles

DIRECTIONS
for the waffles:

  1. Preheat waffle iron.
  2. In a mixer fitted with a whisk attachment, beat eggs until light and fluffy.
  3. Add oil, flour, milk, oil, sugar, baking powder salt and vanilla. Mix until smooth.
  4. Fold in sprinkles.
  5. Spray waffle iron with non-stick spray and pour batter onto the iron. Cook until the waffle is golden brown.

for the whipped cream:

  1. In a stand mixer fitted with a whisk attachment, beat heavy cream and powdered sugar on high speed until it becomes thick.
  2. for the icing:
  3. In a medium bowl whisk powdered sugar, milk and vanilla until smooth.
  4. Add a few drops of pink food coloring and mix until you get desired color.
  5. With a spoon, drizzle icing over waffles and top with a generous handful of sprinkles.
